Do these accessories fit every car?

Yes, for the most part: the seat belt covers wrap around any strap, the neck pillows sit on the headrest and the air fresheners clip onto a standard vent slat. Only the sun shade calls for checking the dimensions against your windshield.

Is a rearview mirror charm allowed?

There's no rule against it as long as it doesn't block the driver's view. A short, lightweight charm that doesn't swing in front of the windshield raises no issue at inspection.

Do the neck pillows stay in place?

Yes, they strap onto the headrest with an adjustable elastic band, which keeps them from sliding down the moment you brake. That's the difference from a plush toy simply wedged behind your neck.

Do these accessories hold up to the heat inside a car?

The materials are chosen with that in mind, but a closed cabin in full sun can climb past 60 °C. Air fresheners run out faster in that case, and painted resin pieces are better kept in the glove box.
